This recipe comes courtesy of Carmen Scott.
¾ cup rolled oats
½ cup natural peanut butter
1/4 cup honey
¼ cup maple syrup
1/3 cup cocoa powder
¼ cup ground flaxseed
1/3 cup shredded coconut (plus extra for rolling)
2 tsp pure vanilla extract
Pinch of cinnamon
Combine all ingredients in a mixing bowl and mix well.
Roll into 2 inch balls, and then roll to coat the ball in shredded coconut.
Best to freeze or refrigerate until ready to eat.
